Bernard Defaix produces really varietal, rich, nuanced genuine Chablis of the highest level, a real (re)discovery. The estate works completely ecologically, not evident in Chablis.
Jasper Morris: “Not so marked in colour as the Chablis, but evident on the nose, with some slightly bruised apples. Excellent fruit across the palate, not too dissimilar from the regular, perhaps more weight but less finesse. Didier thinks it shows a chalky character.
