This wine is composed of 65% Syrah, 20% Carignan, and 15% Mourvèdre. The vineyards are located in the commune of Argelliers and benefit from a cool microclimate, giving the wine a relatively northern character. The plots sit on Jurassic limestone soil at an altitude of 230 meters with a northwest exposure. The grapes are hand-harvested and traditionally vinified, with each grape variety processed separately. Approximately 50% of the grapes are destemmed, depending on the vintage and the ripeness of the stems. The grapes are then carefully transferred into the vat using a conveyor belt to preserve the integrity of the berries. Fermentation often begins within a few hours and is always initiated by indigenous yeasts. Gentle pump-overs are performed to avoid coarse extraction and to achieve a delicate structure. The duration of maceration is determined by daily tastings. The wine is aged for approximately 18 months in 1000-liter clay amphorae. Bottling is carried out without fining or filtration. The only sulfur added is 2 grams per hectoliter, and this is done solely at the time of bottling.

Stéphanie and Frédéric met in Montpellier in 1999 while studying wine and oenology. Inspired by mentors like Didier Barral and Olivier Jullien, they embraced organic and later biodynamic farming, valuing minimal intervention to create expressive, natural wines. Since 2003, they have cultivated organic grapes and, since 2010, biodynamic grapes on 25 hectares in Argelliers and Murles, a cool area of Languedoc. Located northwest of Montpellier in the Terrasses du Larzac, the estate benefits from significant day-night temperature shifts. The region’s harsh climate and limestone soil result in deep, balanced wines with finesse.
