Sac de Billes comes from a terroir of clay-limestone soil over yellow tuffeau. 100% Chenin, the vines are 30 to 50 years old. Aging process: one year in barrels, followed by four months in tanks. Barrels used include 5% new barrels and barrels that have aged 3 to 8 wines. Contains 15 to 25 mg/L of SO2 at bottling. Light filtration on earth. The result is a fresh and vibrant Chenin, with aging potential of 10 to 15 years.

Domaine Mélaric is a young estate, established in 2006, with some top vineyards on the limestone soils in Saumur, near Puy Notre Dame. Aymeric and Mélanie work entirely according to the principles of natural wine without additives, using natural yeasts, ageing in wood and tanks, no filtering, and minimal amounts of sulfites at bottling. Their wines are particularly pure in terms of fruit and possess a delightful finesse.
