Les Sorbès ligt onder Clos de Tart. Michel Noëllat bezit hier 0,15ha met 40 jarige stokken. De druiven worden volledig ontrist, dan volgt een koude maceratie van 3 tot 5 dagen gevolgd door de fermentatie van 18 tot 20 dagen in temperatuur gecontroleerde inox cuves. De wijn rijpt dan nog 16 maanden eiken vaten, 50% nieuw.
