The Dolcetto is fermented in steel and aged for only a few months in steel and concrete, capturing the intense fruit. It is a characterful, nuanced Dolcetto with a firm structure, but without the sometimes harsh tannins Dolcetto can have. That is because 70% of the pepins are removed before fermentation thanks to a special horizontal press!
