Domaine Mélaric is a young estate, established in 2006, with some top vineyards on the limestone soils in Saumur, near Puy Notre Dame. Aymeric and Mélanie work entirely according to the principles of natural wine without additives, using natural yeasts, ageing in wood and tanks, no filtering, and minimal amounts of sulfites at bottling. Their wines are particularly pure in terms of fruit and possess a delightful finesse.

The Billes de Roche vineyard is situated just above the Clos de la Cerisaie on an eastern slope at an altitude of about 90 meters on a sandy-clay soil on white tufa stone. 10 to 50 year old Cabernet-Franc vines, 100% destemmed and aged for 2 years in used wooden barrels, before being bottled without filtration, containing only a minimal 15-20mg per liter of sulfites. A powerful, expressive Cabernet-Franc that will mature easily for 10 to 15 years.
