This Blanc de Noirs, pure Pinot Noir, is Cherubini's top wine. It wine is composed of 80% from one harvest and 20% reserve wines that are kept in a solera system in wooden barrels. It is a particularly natural wine without any additions apart from a minute dose of sulphite.

In the glass, the Italian bubble shows a light amber colour. The character of the region manifests itself in a distinct minerality. Great complex structure, with decent power under the cork and a striking, precise freshness

Do you know the sparkling wines of Franciacorta? Those all come from an area in Lombardy bordered by Lago d'Iseo and the city of Brescia, among others. With the Cherubini estate, we are just outside this zone, still a bit further east.

In a natural park outside Brescia, dotted with rolling hills, we find the valley that gives Cherubini its identity. Over the centuries, water repeatedly fed new layers of soil here. This created a terroir that can best be compared to a lasagne. The rocks here burst with chalk, the subsoil consists mainly of clay. This valley also enjoys constant light breezes and fluctuating temperatures. Soil and climate give Cherubini's wines their distinctive minerality and acidity.

Weedkillers and pesticides are not used here, by the way, the estate works biodynamically. The underlying philosophy? As little intervention as possible, both in the vineyard and in the cellar. That also explains the choice of classic Zero Dosage methods - ageing takes place in cement tanks and for some cru's also partly in barrique. After manual dégorgement, it is topped off with just the still base wine. This guarantees products that fully represent their terroir.
